This is a "cinnamon roll" cookie recipe I got from @recipesforyouu on Instagram. Though, keep in mind it only makes 8 cookies.
Ingredients:
For the cookie dough
- 1/2 butter, softened
- 1/4 cup sugar
- 1 egg
- 1/2 tsp vanilla
- 2 cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- 2 tsp cinnamon
- pinch of salt
For the cinnamon sugar crust
- 1/8 cup butter, softened
- 1/8 cup cinnamon
- 1/4 cup sugar
For the frosting
- 1/4 cup butter, softened
- 1/2 cup cream cheese
- 4 tbsp powdered sugar or more to taste
Directions:
For the cookie dough
- Cream the butter and sugar together with a handheld mixer.
- Add the egg and vanilla and mix again.
- Add the flour, baking powder, baking soda, cinnamon, and salt and mix with a spatula.
- Divide the dough into 8 equal pieces.
- Roll the pieces of dough into balls and slightly press them down.
For the cinnamon sugar crust
- Mix the butter, cinnamon, and sugar in a small bowl with a fork, spoon, or spatula.
- Divide the cinnamon sugar mixture between the 8 cookies.
- Gently press the mixture onto the top of the cookie.
- Bake the cookies for 12 minutes at 350 degrees F.
For the frosting
- Cream the cream cheese, butter, and powdered sugar with a handheld mixer until smooth.
- Divide the frosting between the 8 cookies.
- With a spatula, spread the frosting evenly across each cookie.
- If wanted, decorate with sprinkles of your choice.
