"Cinnamon Roll" Cookies

"Cinnamon Roll" Cookies

This is a "cinnamon roll" cookie recipe I got from @recipesforyouu on Instagram. Though, keep in mind it only makes 8 cookies.

Ingredients:

For the cookie dough

  • 1/2 butter, softened
  • 1/4 cup sugar
  • 1 egg
  • 1/2 tsp vanilla
  • 2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • pinch of salt

For the cinnamon sugar crust

  • 1/8 cup butter, softened
  • 1/8 cup cinnamon
  • 1/4 cup sugar

For the frosting

  • 1/4 cup butter, softened
  • 1/2 cup cream cheese
  • 4 tbsp powdered sugar or more to taste

 

Directions:

For the cookie dough

  1. Cream the butter and sugar together with a handheld mixer.
  2. Add the egg and vanilla and mix again.
  3. Add the flour, baking powder, baking soda, cinnamon, and salt and mix with a spatula.
  4. Divide the dough into 8 equal pieces.
  5. Roll the pieces of dough into balls and slightly press them down.

For the cinnamon sugar crust

  1. Mix the butter, cinnamon, and sugar in a small bowl with a fork, spoon, or spatula.
  2. Divide the cinnamon sugar mixture between the 8 cookies.
  3. Gently press the mixture onto the top of the cookie.
  4. Bake the cookies for 12 minutes at 350 degrees F. 

For the frosting

  1. Cream the cream cheese, butter, and powdered sugar with a handheld mixer until smooth.
  2. Divide the frosting between the 8 cookies.
  3. With a spatula, spread the frosting evenly across each cookie.
  4. If wanted, decorate with sprinkles of your choice.
