Pineapple Stuffed with BBQ Pork

El Bien del Cerdo wants to share with you the tastiest pork recipes to make the most special dishes, along with their preparation, so that you can experiment in the kitchen and enjoy their incredible flavor.

 

This recipe is one of our favorite combinations, pork is amazing with all kinds of sauces, whether they are spicy, sour or sweet. For this reason, we want to share with you a juicy recipe that perfectly combines the tropical flavor with the flavor of the pork.

Ingredients 

2 cups of cooked and seasoned shredded or ground pork.

1 extra-large pineapple.

20 slices of bacon.

1 cup of BBQ sauce.

Salt and pepper to taste.

Toothpicks.

 

Preparation 

Cut off the base of the pineapple and set aside for later use, and with a long thin knife cut around the core of the pineapple and then scoop it out with a spoon, leaving a generous hole in the center yet thick walls all around, and taking special care not to break the walls.

Carefully peel the hollowed-out pineapple without removing the crown.

Fix the bacon around the pineapple with the help of toothpicks until it is completely covered.

Mix the prepared meat with most of the BBQ sauce, leaving some for basting,  and if necessary season meat with additional salt and pepper to taste.

Fill the hole of the pineapple with the prepared meat and cover with the pineapple base that you reserved previously, using toothpicks to hold it.

Baste the pineapple with BBQ sauce and bake in a pre-heated oven for 45 minutes at 200 degrees Celsius, about 390 Fahrenheit.

Every 15 minutes rebaste with BBQ sauce, Remove from oven when bacon is thoroughly cooked, giving it at least 45 minutes of cooking time.

Cut into slices and decorate with a little more sauce.
